Go go go crash!

WHEW, where to start?! I made a lot of stuff today!!


Breakfast:
Grapefruit, mmm. No sweetener necessary!


Lunch:
Tomato, corn, and lime soup. I actually started out with creamed corn. I had 4 ears of corn, I cut the corn off, and then used the back of my knife to get out the corn 'cream'. I ate some just like that, but I was wanting soup, so I also cut up the remainder of an onion I had in the fridge, a clove of garlic, and a large tomato, and threw it in a saucepan with the corn, some water, and a bit of salt. Once everything was cooked, I took it off the heat and added lime juice from half a lime. I made a mental note to be less generous on the lime next time as it was a it overpowering for just one serving. But still tasty!



Dinner:
Veggie lo mein and ginger salad with pickled daikon. The veggie lo mein was red onion, carrots, celery, zucchini, and dried shiitake and maitake mushrooms. For the 'sauce' I used just soy sauce, ginger, garlic, chili peppers, a few hot sauce, and some hoisin sauce. It actually tasted nothing like Chinese restaurant lo mein, but that didn't really matter to me hah.



Rosemary flax crackers:
ground flax seeds, wheat germ, nutritional yeast, salt, pepper, and rosemary. I usually like using almond meal or ground sunflower seeds, but I was trying to use up some wheat germ.



Vegan chocolate chip cookies
I then made vegan chocolate chip cookies from an Everyday Dish TV podcast. I used powdered sugar instead of regular unrefined sugar because that's all I had. These are extremely delicious!! 



Well, I'm exhausted! I've been needing to catch up on sleep anyway, and now that I have eaten far too many cookies so I'm having a serious sugar crash hah. Wishing you all a nice night! Happy eating :)
